INGREDIENTS:

  • 1 1/2 cups pitted dates
  • 1/4 cup sunflower seeds
  • 2 tbsp coconut oil
  • 3 tbsp chia seeds
  • 2 tbsp dark cocoa powder
  • 1 tsp vanilla extract
  • 1/2 cup desiccated coconut (for rolling)

METHOD:

  1. Place all the ingredients, apart from coconut, into a food processor and whizz for 45 seconds, or until mixture looks like small dark breadcrumbs.
  2. Remove mixture from processor and empty into a bowl.
  3. Scoop up little handfuls of the mix, squeeze together and roll into small balls. Then roll each ball through the desiccated coconut.

Serve straight away or store in airtight container in the fridge – will keep up to 10 days.

TIP: This recipe is perfect for involving your tamariki by allowing them to help roll the mixture into balls!
